This is a super easy one pot meal - tasty tomato basil rice with chicken. 10 minutes preparation and forty minutes in the oven. In an oven proof dish, heat one tablespoon of oil and fry a chopped onion and bell pepper. Add one Cup of uncooked long grain rice, a 14 ounce can of tomatoes, a Cup and a half of chicken stock (a cube will be fine) a teaspoon of dried basil and salt and pepper to taste. Bring it up to the boil and then put the chicken portions on top. Put the lid on your casserole dish or cover with foil. Bake for forty minutes. That's it - how easy was that!
