How can you get a real good color developement on Scallops when frying ?

Hi Ron

Well - it depends on what you're doing with them but a good idea is to use a very hot griddle and sear them on that - just brush oil onto the griddle to prevent sticking.

A very hot fry pan will also do the same job but you won't necessarily get the same black scorched ridges that you get with a griddle.

Also, of course, you'll get the same effect with a barbecue grill.
