Trout is a beautifully delicately flavored river fish. Rainbow trout is available all year to fish with a rod and line in lakes, but rivers do have a closed season and that is laid down by local by-laws.

However, farmed trout is available all year and you can buy it fresh or frozen.

It makes a very generous one portion sized serving but you can get larger ones which could serve more people.

I like trout better than salmon for a lot of dishes, but it's a matter of choice and any salmon recipes you have are certainly interchangeable with trout.

Baked Trout with Wine and Garlic

The smell of the garlic, wine and herbs as you open the oven is delicious. Serve with some new potatoes and buttered vegetables. Pour the juices from the baking dish over the trout prior to serving.

A very simple method of cooking which won't overpower the delicate flavor. Once again, buttered new potatoes and vegetables are good with this.
