Salmon

Fresh salmon is considered to be one of the best fish.

Wild is best as it builds up muscle swimming against tides and upstream in the river.

Farmed tends to be less firm fleshed. Fish farmers use artificial water currents to simulate tides but the fish are flabbier - there tends to be brown flesh near the skin as well.

Canned is very tasty and retains its health properties - Omega 3s aren't destroyed in the canning process.

It's excellent for making sandwiches, fishcakes - great with a salad. My mum uses it as you would fresh - she serves it with mashed potato, vegetables and cheese sauce.

Canned is incredibly economical. It goes a long way as its very tasty.

The taste of canned salmon is always reliable once you've got the brand you like.

Fresh salmon can sometimes be a bit metallic tasting I find - it depends on the water they've come from and whether they're farmed or wild.

Wild is most expensive.

Smoked is wonderful.

It's my favourite type. I buy a side when I can, slice it very thinly with a sharp knife. You can buy it ready sliced and it's normally interleaved with cellophane so that you can easily separate the slices.

I love it thinly sliced in brown bread sandwiches with a squeeze of lemon and twist of black pepper.

I use it to make fish cakes - it's quite expensive, but is very strong in flavour so a little goes a long way.

You can buy trimmings relatively cheaply which are good if you're going to cook with it - you'll need to go through it to pick out any bits of skin or bone, but it's well worth the effort.

It's great in quiches - either fresh, canned or smoked - use a few spoons of cream cheese in the flan case before you pour the egg mixture over - it's delicious.

It's good in a fish pie as part of a combination - it adds a bit of colour as well as a different flavour.

Use it to stuff vol au vents, fill sandwiches, flans or as part of a meal.

It's easy to bake, roast, pan fry, grill - there's loads of recipes on this website to try.

The health benefits are not to be forgotten - it's recommended that you eat 2 to 3 portions of fish a week with 1 or 2 being oily fish.
