Mahi mahi

After baking Mahimahi the fish taste was so strong we had to throw it away!!!

What is the secret to cooking good fish?

I used olive oil, salt and pepper.. it was horrible! Please tell me what I did wrong???

Hi Susan

Sorry to hear you didn't enjoy your mahi-mahi.

It is normally considered to be a mild fish, so maybe what you had was past its best - a bit old perhaps?

Fresh fish should smell fresh - if it has a strong fishy odor, then don't buy it - that's a general rule of course, but build up a relationship with your fishmonger and he will guide you.

Sometimes frozen fish can be a bit suspect.

Fish frozen at sea is normally good but if you buy it from a fishmonger, some of them will freeze stock that's been on their counter for a couple of days and then after you've defrosted it, it can be quite strong tasting and smelling.

I would recommend using a mix of butter and oil to bake or cook your fish - I like to use half and half if I'm frying and dot a bit around the fish if I'm baking.

Of course, if you're watching the calories, then this isn't good advice :-)
