Lemon Pepper Fish Recipes




This is one of my favorite lemon pepper fish recipes.

Cod fillets marinaded for 30 minutes in lemon and chopped pepper and then baked in the oven - simplicity itself.

Lemon Pepper Fish Recipe
4 fillets of cod, skinned and boned
Pinch of salt and fresh black peppercorns
1 lemon - juiced
1 chilli pepper - deseeded and finely chopped
1 tbspn olive oil

Place the cod fillets in an oiled ovenproof dish - season with salt and pepper and the lemon juice.

Sprinkle the chopped pepper and oil over and then rub into the fillets - both sides.

Leave for 30 minutes or so, turing half way through.

Bake in the oven (Gas Mark 5, 375 F or 190C) for 20 to 30 minutes until the fish is cooked - when it begins to flake.

You could microwave this dish for 10 to 12 minutes - turn the fish halfway through.

A simple, straightforward way of cooking cod.

You could serve this with some new boiled potatoes, fresh broccoli and cauliflower dotted with butter - it's absolutely delicious - the pepper adds a lovely 'bite' to the flavor of cod.
