Fish dish for wedding reception

Our son is getting married at the end of May. He does not eat meat, which goes for many of his friends, as well.

To add to this dilemma, the venue does not have cooking facilities. The caterer will be cooking everything on a big cooker.

We are thinking about enough fish for 100 maybe less, people.

Any ideas or suggestions? We will be able to keep everything warm.

My husband is allergic to shellfish, so we want to steer clear of that....

Wow - what a great question.

Is this for you to ask your caterers to do or for yourself to do.

If it's a buffet style meal, then I suggest the following:-

I would most definitely go for whole poached salmon with mayonnaise on the side.

A smoked salmon platter as well - lemon wedges and brown bread and butter to serve with that.

Perhaps some fresh dressed crab.

Smoked fish pate - use mackerel or trout - some melba toast and/or crusty bread to serve.

Some vol au vents - I know you said your husband is allergic to shellfish, but a few prawn vol au vents would go very well - also some large shell on prawns go down well - just make sure your husband stays away from them.

The caterers will be able to give you an idea of quantities - bear in mind that meat eaters will also want to sample some of these things as well.

Now - if it's a hot fish dish you're looking for, then poached salmon with watercress or sorrel sauce would do very well.

It is elegant and most people will enjoy it.

A 6oz fillet or steak will be ample - once again, your caterers will be able to guide you on quantities of sauce and vegetables to go with this.

Or roasted monkfish with a tomato sauce and vegetables.

Trout en papillotte.

Baked halibut.

All these recipes are on the site - I think it's a lovely idea to have a fish option - I've always made fish a part of every celebration meal even if it's only making a fish pate as part of a buffet.
