Beer Batter Fish Recipe

This recipe is my mom's and is particularly wonderful with fish.
I have many happy memories of dad catching fish for mom to batter and fry.
This recipe makes enough batter to coat about 2 medium fish fillets.
It takes a bit of time because you should let it stand for a few hours to
break down any rubberiness. If you are in a hurry and don't have time to
let it stand, try to mix the batter with as few strokes as possible to
avoid a build up of gluten in the flour.
- 1 1/3 cups all purpose flour
- 1 teaspoon salt
- 1 tablespoon cooking oil
- 2 egg yolks, beaten (keep the egg whites for later)
- 3/4 cup flat beer
Method
Combine the flour, salt, oil and egg yolks in a bowl and mix well. Then gradually
add the beer while stirring constantly. Cover the batter and let it rest in
the refrigerator for 6 hours (3hrs minimum).
Remove from the refrigerator and just before coating the fish, add to the batter mix
the 2 egg white which have been stiffly beaten.
The fish pieces should be patted dry to help the batter stick.
Fry in heated cooking oil until the fish is done.

I've been asked if it's possible to make this recipe without beer - it won't be beer batter then of course, but I would suggest trying half sparkling mineral water and half milk to substitute for the beer.
